Like many people on a busy morning if I am in a hurry I can tend to grab the quickest and easiest breakfast without even thinking about it. During the summer when school and exams are over and we have a little bit more time to spare I like to make a more nutritious breakfast. Normally, if I have more time in the morning I love to make and eat my own homemade granola. Rather than just having granola on it’s own with milk, I also like to make other breakfast snacks out of the granola. In this blog-post I’m going show you some granola recipes that I use to make these delicious breakfast snacks.
Homemade Granola
Ingredients…
- 2 cups / 200g of Oats
- 50g of Sunflower seeds
- 50g of Walnuts
- 50g of Pumpkin seeds
- A handful of dried fruit
- ½ cup / 100ml of Maple syrup
- ¼ cup / 60ml of Coconut oil
You can use any nuts or seeds of your choice in this recipe, and switch it up a bit.
What to do…
- Pre heat the oven to 170°C
- Melt the coconut oil in a saucepan over a low heat.
- In a large bowl, mix the oats with your nuts of choice and add in the coconut oil and maple syrup.
- Pour in a baking tray, and pat down so it’s evenly spread out. Bake in the oven for 15 minutes.
- Remove from the oven and mix in the dried fruit and bake for a further 5 minutes until golden.
- Allow to cool, then you can store it in an airtight box. Serve this with some milk or yogurt and fresh berries for a delicious breakfast.
Granola Bites
Ingredients…
- 1 Carton of your preferred yogurt flavour
- Granola
- Fruit, I used blueberries and raspberries
What to do…
- Use a shallow muffin tray and line it with muffin cases.
- Place a tablespoon of granola into all the muffin cases.
- Put a tablespoon of yogurt into the cases, filling them half way.
- You can then decorate your granola bites and position some fruit on top.
- You can then place these in the freezer for 3 hours and enjoy!
Granola Bars
Ingredients…
- 200 grams of Oats
- 3 tablespoons of peanut butter
- 2 bananas mashed
- ½ cup of mixed nuts and seeds
- ½ cup of dried fruit
What to do…
- Pre heat your oven to 160°C.
- In a pot over low heat mix your mashed banana and peanut butter together.
- In a separate bowl combine all your dry ingredients (oats, seeds, nuts and fruit).
- Pour the dry ingredients into the pot over the low heat and mix all ingredients until well combined.
- Line a cake pan with grease proof paper and fill it with your granola mixture.
- Flatten it out nicely and bake in the oven at 160°C for 18-22 minutes.
- Let it cool completely before cutting it into squares.
Granola Parfait
Ingredients…
- 1 Carton of yogurt
- Granola
- Some fruit of your choice
What to do…
- In a jar layer your yogurt and granola adding fruit in between every layer.
- To decorate you can add some fruit on top or drizzle with some honey or maple syrup.
- Eat straight away or refrigerate overnight.
The granola bites are the best! Definitely making some after seeing your post!
